I've never been a fan of beets. But I did see a show where they roasted them. Those I'd try. One recipe was called for them to be buried in salt and roasted. Maybe check out the food net work for recipes for roasted beets? If you can slice them thin, what about chips? Those Tera ones are sure good. It'll be interesting to see what our cooks here have.

I would love to eat beets but they are too high in carbs for me. But if I were to eat them I would peel them, chop into maybe 1/2" chunks, add olive oil and salt and oven roast until tender.

Also pickle them.

Slice beets , sliced onions, apple cider vinegar, sweetner of choice. How much you use depends on how beets you have.

I grow golden, red, and candy cane.I can them too.Beets are really good julienned on salad.

I Love fresh beets! Chop them in to bite size pieces, and roast them at 400. They take awhile, probably 40 minutesish, but check around thirty. Sprinkle with garlic and salt, top with chunks of goat cheese. Back in the oven to melt the goat cheese. Earthy, but the beets get a smidge sweet at the edges. The musky goat cheese and garlic salt are a perfect balance.
