Obsession with Indian food

Just getting back into lowcarb. I know this can be done. C'mon, its veggies, meat and curry sauce, for the most part!! Give me your best shot!

I use a jar of Safeway Select Tikka Masala Simmer Sauce. I add a bit of cream, cilnatro and chicken chunks.

Here's one I love: Indian Kheema Matar (Beef with "Peas" and Mint

But do a search on "Indian" with me as author and "threads started by" as I'm an Indian food addict and have posted 5-6 recipes on the forums before. I have a BUNCH on my blog, too. Just seach the word Indian there.

When I was growing up, my church sponsored an Indian missionary. He came to visit once, and shared this recipe with the ladies. My mother made it often when I was growing up (with rice, of course). I loved the blend of spices so much, I decided to try it with cauli rice, and I'm extremely happy with the results. I personally can't eat very spicy foods, so I've toned down the chili powder quite a bit. If you want it spicier, feel free to add as much as you like. I also tend to be a little more generous with the measurements of the spices, but be careful with the salt. I've accidentally over-salted it before and ruined it. I hope you'll try it!

Cauli-Ani (Biriyani)

3 T. butter

1 tsp turmeric

1 tsp onion powder

2 tsp chili powder

1 tsp coriander

¼ tsp cinnamon

¾ tsp cardamom

¼ tsp salt

4 tsp chicken bouillon granules (the original called for cooking the rice in chicken broth, so I use bouillon for the flavor)

1 head cauliflower, shredded

2 medium chicken breasts, or 5 chicken tenders, cooked chopped


Mix everything together but the cauliflower and the chicken. Saute’ in butter for a few minutes, being careful not to burn. Add a few drops of water, if necessary. Shred the cauliflower with your food processor so it resembles rice. Stir the cauliflower into the spice mixture until coated well. Add about ¼ cup of water, cover and steam for about 9 minutes, or until the cauliflower is tender but not mushy. Stir in the chicken and heat through. Serve with peanuts and chopped, boiled eggs, if desired. (Some people would also add coconut flakes, so if you want, you could add unsweetened coconut as a topping, too.)
