Make Ahead Freezer Meals?

Good Evening Everyone

Well, I am going grocery shopping tomorrow but I know my upcoming schedule starting at the end of September is going to be CrAzY!

I want to try to get in the habit of making meals ahead of time that fit the low-carb lifestyle I have chosen so I don't fall of the wagon -- I don't want to be faced with that age old question of "whats for dinner" when I am exhausted and just want something quick.

So - I have a family of 3 (myself and my 2 kids) and need meals that I could make ahead on the weekend and either stash in the fridge or freezer.
Breakfast is also a real challenge for me... I've gone through the recipes on this site and found some that will work - but I still need something quick for breakfast.

If you have any recipe ideas for make-ahead meals or super-fast breakfast... I'd LOVE it.

This is my 3rd attempt at LC and though I lose weight every time - I think my downfall is that I am not prepared enough - so when those busy days come... I resort to options that aren't LC friendly and then I give up since I messed up anyway . I want to break this cycle.

Annett, Good idea to cook and freeze. Here is one you might want to try for breakfast or dinner depending what you put in it. You could cook it in a muffin tin and have it ready to microwave. Maybe defrost the night before?

Crustless Quiche

Dozen large or jumbo eggs
2 cups heavy cream
2 cups shredded cheese (cheddar, swiss, mozzarella, monterey jack etc)
1 to 2 cups of cooked meat (bacon, sausage, spam, ham etc)
chopped onion to taste (optional) - (remember the carbs!)
broccoli or spinach or other cooked veggie (optional)

Whip up the eggs and cream. Fold in other ingredients. Pour in a 9x13 inch pan. Or do what I do and pour in a large muffin pan (makes 12 muffins). Either way use cooking spray first or butter the pan. Bake 20 minutes at 350 degrees or until cooked through (a little longer if in the 9x13 pan). This freezes exceptionally well, just nuke in microwave for 90 seconds or so. Make a batch on the weekend for quick and easy breakfast during the week.

I use glass lasagna pan and cook at 350 for 35 minutes.. let cool before cutting.

Definitely lasagna. Just use deli sliced chicken as noodles and a jar of lower carb sauce.

I like to smoke a big brisket or a turkey or a ham and freeze leftover meat in single servings in large ziploc bags. Just heat up and serve with a simple salad, coleslaw or green beans or cheesy broccoli or cauliflower.

I also precook a bunch of bacon, breakfast sausage, fajita meat, chicken wings or legs, meatballs and hamburger patties. It's nothing to microwave a hamburger and top with some bacon, cheese and avocado or throw some salsa and cheese on fajita meat or top meatballs like pizza and bake in the oven or throw some buffalo sauce or bbq sauce on chicken wings.

Now I'm hungry.

Also a big fan of meals on hand in the freezer!

Here's what I like to make in a massive batch and keep frozen:

Seasoned taco mix (for tortillas or taco salad)

Maria Emmerich's Greek quiche (nice crust, you can use the base recipe for all kinds of variations based on what meat, cheese, veg you have in the fridge) and freezes very well

Thai curry (so easy with curry paste and coconut milk, your choice of protein & veg)

Indian Curry (same deal)

Ground beef tomato pasta sauce (zoodles, sloppy joes)

Homemade soups

Soon I'll add lasagna back in to freezer rotation (haven't found good noodle sub yet) trying Jen's (above) idea of deli chicken as noodles. (Jen, I'm starting to feel a bit like your food stalker!)

Linda Sues website is one of the best for making recipe and freezing one. She is awesome and you proably know who she is.

Linda's Low Carb Menus & Recipes - Recipes

Make a meatloaf recipe and cook it in muffin pans. I do that alot.
