Strawberry Almond & Blueberry Granola Crusted Muffins

Tastes so yummy! Like strawberry pancakes! So could be eaten with a little melted butter and sf maple syrup as well but I like how they are portable once cooled. A driving to work breakfast!

I just took about 5 strawberries and minced them. I added 2 packets of Truvia and a splash of SF Strawberry DaVinci syrup. I microwaved them for 1 minute and cooled completely. Then I stirred in a tiny drizzle of vanilla and another of almond extract. I stirred the strawberry mixture into one 2 biscuit serving size of Sooze Gibbs' Keto Mile High Biscuits (google Fluffy Chix Keto Mile High Biscuits) batter and increased the microwave time to 90 seconds. I flipped them onto a plate and microwaved them another 15 seconds to cook the upended bottoms a bit more. Allow to cool before eating.



For the blueberry version I used vanilla syrup instead of strawberry, about 1/4 cup blueberries and then just enough granola cereal (Granola Bar bites/ Granola cereal) to cover the bottom of the greased ramekins before adding the muffin batter. I increased the time to 2-2:15 minutes (one was a bit bigger and took longer- stop the microwave just when the top middle is no longer wet in the middle). I have to say the "granola" crust was awesome!!!
