Need help finding an old recipe.

Hi guys. I sure hope someone can help me. Back around 2002 - 2006 I followed the LC WOE and I had a bunch of my favorite recipes in a binder. Some how when we sold our place and started traveling I lost the binder.

I have since found almost all the recipes I lost except the one want the most. Coffee cake

It is a recipe for coffee cake that the Kid and I dearly love. It's make with almond flour and coconut flour, it does use honey for the sweetener. It's has a chopped walnut or pecan topping made with cinnamon and butter. I don't remember the rest of what goes into it.

And while I'm at it does any one the have the recipe for carrot cake and brownies made with WPI ?

Well that's about it guys.

I really appreciate the help.

Here's one from the Nourishing Gourmet that sounds like what you are looking for.

Gluten Free Coffee Cake

Cake Ingredients:


2/3 cup honey (UPDATE: You can vary this depending on your tastes–I’ve been told 1/4 cup works just as well!)
1/4 cup butter, melted
4 eggs
1/2 cup almond milk
3/4 cup arrowroot or almond flour
3/4 cup sifted coconut flour
2 tsp. baking powder
1/2 tsp. salt

Streusel Ingredients:

1 cup chopped pecans
2 Tbsp. honey
1/4 cup butter
1 1/2 tsp. cinnamon
1 tsp. coconut flour

Cake Directions:

1. Preheat oven to 350 degrees. Grease or butter an 8×8 baking pan.

2. Combine honey, butter, eggs and almond milk in a bowl until well combined.

3. Combine arrowroot or almond flour, coconut flour, baking powder and salt in a separate bowl.

4. Mix dry ingredients into wet ingredients. Stir well.

5. Pour HALF of the cake batter into the prepared cake pan and spread out evenly.

6. Prepare streusel.


Streusel Directions:

1. Combine all the streusel ingredients in a bowl.

2. Distribute half of the streusel over the batter in the pan.

3. Pour the rest of the cake batter on streusel and top with remaining streusel.

4. Bake at 350 degrees for 28-35 minutes. Remove from oven when a knife inserted in the middle comes out clean.

5. Serve as is or slather in butter!

Coffee cake

Bar10der. Thanks, but that isn't it... BUT I will put that one in my new binder to bake at a later date. it looks fantastic!

It did try using the search but I got bumfuzzled, and had to give it up.


Susan_C. I belive that's it!!! I seem to remember changing a couple things like cutting back on the honey by half and using stevia to sweeten still getting that wonder honey flavor.

I am out of honey. Can I substitute erythritol? Would I add it as granular? Would I need to add more liquid of some sort? Sorry, I do not know how to substitute in baking very well.

So many gluten/grain free cakes use honey for sweetner. Can you just substitute another sweetner and not use honey at all?? This is driving me nuts since there are a bunch of cakes I want to make but do not want to use honey. The recipe posted here looks awesome!

I substitute xylitol all the time for honey. For 1/2 cup of honey or less, it's an equal amount of your sweetener of choice.

Mindy, yes. Just add it to your dry ingredients. After you've mixed it up, if it seems too dry you can add liquid. Cream, water, coconut milk. It really shouldn't matter. Sometimes I've even added a little more oil.

If you want to see a lot of recipes that use a lot of easy to find ingredients and are pretty easy to make, check out all day I dream about food. Or cut the wheat ditch the sugar. Made her birthday cupcakes. I'd bet no one could tell they weren't made with flour. They were awesome. Just made her double chocolate fudge brownie cookies. Awesome! Had to hide them before my youngest showed up for dinner. I left her out two. Yeah, she was wanting more.

I substitute for honey all the time. And I use many Paleo recipes. Put in half of what you might use then taste, if it's right to your taste then go with it.
