Summertime Favorites for when it's too hot to cook!

Hi All,

Meat and veg on the grill is getting dull so I'm looking for some dinner inspiration...What do you love to eat for dinner in the summer when it's too hot to turn on that oven! Any one pan stove top dishes? Favorite sandwich replacements?

Lots of salads and snack meals for us. DF grills almost weekly for us in the summer (enough so we have food for 3-4 days) then we eat salads.

I also make lots of wraps during the summer using lc tortillas or lavash.

Tacos don't take long to make either...you can use lc tortillas or make cheese shells.

Making protein drinks helps ya skip a meal here and there.

I cool off with slushies made from strawberries and crystal light or something similar.

Mexican shrimp cocktail.

Pico de gallo, picante, sf catsup, horseradish, boiled shrimp (I buy already boiled) and chunks of avocado. To your own taste preferences.

I like to pick up a rotisserie chicken and serve it with a side of caprese salad made with sliced heirloom tomatoes, buffalo mozzarella, lots of fresh basil and a good drizzle of olive oil and lemon juice.
