If you are on maintenance try it on Salt 'n Pepper Triscuits
For LC I use flavored pork rinds. It's delish!

Mr. Jay bought way too much ham from Walmart. It was about a one lb. package of
their brand of ham slices. Very low fat, not much in the way of preservatives and
really kind of bland. So I just took it and made a spicy ham salad which we find
filling, LC., high enough protein and great on pork rinds, celery hearts or crackers.
Hope you enjoy it.

Cut up the ham enough to throw it in your food processor using your 'S' blade,
Pulse it about 10 times. Throw in good mayonnaise, German mustard, sweet pickle
sugar free relish, a little onion, black pepper, dash of sugar free sweetener and pulse some
more. Lastly a good dash of your favorite hot sauce. You can make it as sweet or
as savory as you like. You can add vinegar or lemon. Have a good time. It's just
basic but oh so good to go to for that 3 o'clock snack.

I didn't have sweet relish, so I used dill but added some stevia and it's great!

We love ham salad too and yours sounds very similar to the way I make it. I call it "Minced Ham" because that's what my Mom always called it but it's the same thing.

I got a 2 lb pack of ham at Aldi, which is really too much to make sandwiches...this is a perfect use for a bunch of it. Thanks Barbo, always enjoy your posts.
