This morning I took a quick look at my garden and noticed so many things that were ready to eat.
DH is wanting to get back to lowering his carbs, and usually he snacks on peanuts. So.....
I thought of making him a big delicious salad. Here we go: I used the parsley, dill etc. generously.

Butter lettuce using only the hearts
8 strawberries, sliced
Parsley two varieties, Italian and the other one. Chopped
Fresh dill weed, chopped
Ripe cherry tomatoes, sliced
Chives, chopped
Fresh young green beans, chopped
Fresh young kale leaves, chopped

Toss this mixture in your favorite dressing. I used a light Italian and
lots of pepper and a little salt. All kinds of dressings will be good in this salad.

I used toasted pecan halves, 4 on each plate

Protein Topping Optional:
Had a small can of salmon which I mixed with a good mayonnaise,
chives, black pepper 2 tsp. lemon. Mixed it well and put it on top.
Chicken or turkey salad would also be delicious.

Yum, Barbo, I love "everything" salads!

I don't have a garden this year but my "everything" salads at this point are made up from Costco's spring mix lettuces, artichoke hearts, Kalamata olives, halved, radishes, green onions, sliced little bell peppers (red, orange, and yellow), cucumber, bacon bits, some kind of cheese - usually Feta or bleu cheese, avocado chunks, broccoli and/or cauliflower bits, (cut into little bitty pieces, I don't like big chunks of those in my salads!),halved grape tomatoes, and homemade vinaigrette.

If we're gonna make a meal of it, either grilled Greek-marinated b/s chicken thighs, sliced up; sliced leftover steak; tuna salad; HB eggs, halved; sliced ham/chicken/turkey for a chef's, or salami/pepperoni/prosciutto for an Italian-style salad.

It's all yum, especially this time of year!

I'm jealous of your garden. I just didn't have it in me to start one this year. The last couple years have been very dismal as far as garden results so I just said, eh, not this year!
