Mung Bean Fettuccini

For those still hunting for LC pasta, I just got my most recent order from Netrition, and it included some Organic Mung Bean Fettuccine. I just tried it tonight...Wow! Not as thick as wheat pasta, but nicely chewey, and a 2 oz. serving really filled me up, which that much wheat pasta never did. Also, only 6g net carbs per serving. I put some Moroccan Spiced Chicken stew on top, and it was delicious. And the best news: 2 hours after dinner, my BG was 91. There is also a black bean spaghetti from the same manufacturer, but I haven't tried that yet.

You just boil it for 5-7 minutes and it's done, which makes me see a carbonara in my future. I also imagine sesame noodles on my table this summer. I suspect I'll be eating a lot of this.

Thanks for the review! Can you describe the taste or smell? I've tried the shirataki and kelp noodles in the past but can't stomach the weird smells, textures and taste. I've been using the CarbaNada noodles which I really like but those are 18NC per serving so a very occasional treat.

be careful with the net carbs there. I remember when their black bean spaghetti product looked like it had only a few net carbs when it really had 18. I'm not sure I trust their labeling.

I can only go by the label, but the label says per 2 oz. serving, Total Carbohydrates 17 g, Dietary Fiber 11g, and Sugars 6g. Ingredients are Organic Mung Beans (92%), water (8%). As I said, it didn't affect my BG after the meal.

Taste was fairly bland as I recall, but I had a spicy sauce on it, so it may have masked the flavor. I'll have to try it soon with just butter and some parmesan for a more stringent taste test.

I don't think I could get past that gray color of them personally. They look like they were cooked in dirty mop water or something...

It's actually more green than grey - sort of like spinach pasta. And the taste is very mild, not at all offensive (really, almost no taste, so make a good sauce).

I could do green pasta. That video in the link must have been bad quality or something. Maybe something worth trying since a few said it didn't raise their blood sugar much. I'm like uber sensitive to that. Alot of people are upset when theirs spikes up to 150 or 175....mine goes up to 4 or 500!

Did anyone have issues with this stalling you at all? Or havent you ate it enough to find out yet?

I think the translation for mung bean will say 'green bean' on the pack. However, it's a translation error. It's not the green bean we know in North America but a green colored bean that comes from Asia. It's a bit higher carb than our green bean, that's why I gave them up...but they taste pretty good

The package I got says it has 15 grams of carbs, 10 fiber per serving, so for an occasional pasta I can handle 5 carbs. I hope it is delicious...

Found these at Sprouts.
I tried the Black Bean Spaghetti with my stir fry. Yuck!
I also bought the Mung Bean Fettucine, Adzuki Bean Spaghetti and Mung Bean/Edamame Blend Fettucine. I haven't tried these yet. I was turned off by the black bean. I will try the other ones later this week.

I tried the mung bean fettuccini- it's totally delicious! I would highly suggest it to anyone looking for a pasta substitute to give it a try.

i still don't trust the carb count. I think they already subtracted the fiber carbs.

Oy. Do you think fiber is already subtracted from the total carbs, and they put the fiber on the pack as well? The package says ten per serving with five grams of fiber, so that would make it actually ten grams of carbs per serving. I dont love that...

I've tried black bean spaghetti from costco, it tastes decent, a bit like chewy regular pasta.

OP I love sesame noodles... my go-to sesame sauce is 2 tbs lemon juice, 2 tbs natural peanut butter, 3 packets splenda (I once watched a chinese restaurant make "sesame" noodles and they just used peanut butter- you could add a few drops of sesame oil too).

I finally got around to trying the mung bean fettucine and I like it. Better yet, my 1 yr old niece loved it! I made chicken parmesan with almond flour as the breading and it was great. Since the carb count is questionable, I am keeping my portions really small. But even the small portion I found quite filling. It was even better 2 days later after sitting in the sauce/chicken leftovers.

It would be fantastic if they made lasagne sheets.

I don't know... I didn't test at 3 hours, but that is a good idea. Next time I have it I will have to remember to do that.
