Oat fiber biscotti

I've started using oat fiber as a flour on its own and it's great. It has a nutty taste when cooked and makes great microwave cakes. If you want things fluffier add a little coconut flour but for a 0 calorie 0 net carb product I'm a big oat fiber fan.

My new thing is oat fiber biscotti. I've never successfully made a crunchy biscuit with low carb flours but this is good enough and super simple.

1 egg
Liquid Splenda to taste
Flavouring to taste
(I use davinci gingerbread)
Pinch of baking powder
Pinch of salt
Heaped tablespoon (or tbsp and a half) of oat fiber

Mix together in a bowl into a smooth, still runny consistency.
Pop in the microwave on high for 2 mins

It will come out as a cake which you can eat as-is and will be tasty buuut

Cut cake into thin slices.
Place slices under grill
Grill until golden brown on both sides - careful they don't burn!

Crunch your ginger biscotti!

If you cut the slices a little thicker they'll be crisp on the outside and chewy in the middle which is also nice.

And the carbs/calories count is the same as for 1 large egg so about 90 calories and maybe a carb if you include the baking powder.

Makes about 7 biscotti.

Adding: you can make this without the sweetener and flavouring and it will be like Melba toast - good with pâté I imagine.

Brilliant idea, Moonlights! I have some leftover oat fiber from making the BTF recipe, so this will be a great way to use it.

Love the fact that the only carbs come from the egg. I'm really carb sensitive and have to keep my net carbs down.

Just made this on a pan on the stove top and it is delicious! Can anyone think of how I can make big batches of this in the oven? If not, I'll try it on the george foreman next
