Beef Liver

How do you do it?

Years ago I just used to fry up some bacon and do the liver and onions in the bacon fat. Okay but not great.

Now I eat it out but don't cook it at home anymore but would like to.

Need ideas.

I like to run it through some Carbquik, then fry in bacon fat. Of course, cook the bacon in the pan first, set the bacon aside; cook the onions in the fat, put those on the same plate as the bacon; quickly fry the liver til it's done to your liking but don't overcook!

Plate it up, pop a poached egg or two on top if you like, dig in!

I pan fry it with just some salt and pepper in a little evoo, then take the liver out, add my sliced onions and saute THEN add a little water and simmer the whole thing (liver and onions) about 10 minutes to make a gravy. It's not thick but it does reduce down nicely and make a really tasty onion gravy
