pickled eggs

I've never had them before. I just ate the last dill pickle out of the jar and there's a bunch of pickle juice leftover. I'm thinking about putting in a couple of hard boiled eggs and letting them pickle for a little while. Maybe I'll give it a whirl!

I put cucumbers in my left over pickle juice. I tried beets one time. It was an interesting taste. I have seen small green tomatoes. I wonder if that would be good. But as ntombi said... Let us know

I like pickled, and it like boiled eggs, so hopefully they will be tasty. I'll leave them for a couple of days or so before I try.

pickled eggs normally use a sweet pickle type vinegar mixture, not dill pickle... it sounds dreadful to me with dill, but I don't much like the pickles. I see no reason why you wouldn't enjoy it if you like the flavor.

That is my secret recipe for pickled eggs. I leave them in the pickle juice, in the fridge at least overnight before eating. Don't know how long they will keep. DH will eat them all within a week. This only works once. If you try to reuse juice it wont pickle.

I have done it using the juice from canned beats and they were excellent. I may have to give this a shot myself.

I tried them and they were ok. Tasted exactly like they sound, boiled eggs with a pickle flavour .

I didn't find them dreadful with the dill pickle juice

Pretty Pickled Eggs

Beet Juice
Vinegar (your favorite)
Sugar or Sugar Sub.
Bit of salt.
Hard boiled eggs

The longer they stay in juice the deeper goes the flavor and
color into the egg. They are a pretty fuchsia color.

I just make up the liquid and heat to melt the sugar.
Cool, drop in eggs and refrigerate. They go very fast.

Variations: jalapeno, red onion rings etc.

Pickled beet juice eggs are my favorite. My Mom used to make them for Easter (with sugar), I make them a lot. It's hard to get the Splenda to mix in, so your tip is something I will do from now on. I have no idea why I never thought of doing that. Thanks Barbo...... Ann

Eggs are awesome with dill in them. I make an egg salad with dill in it and I love it.
