The grill is still hot! What can I throw on it quick??!!


Coals were hot, lunch was progressing well, and all of a sudden I'm thinking -

"These coals will be good for at least an hour more…what can I throw on?"



So I grabbed some Bell Peppers (a package we 'lost' in the back of the fridge). I had to cut them in half to be sure there was no mold...there wasn't!! But how to roast ˝ peppers?

So I grabbed a rib rack and stacked 'em into it, and put them on the grill after the Johnsonville Brats came inside for lunch…(While we were eating Brats actually).



The fridge (and our reserves) are ready for the week!

Think I'll whip up some chicken alfredo with parmesan and roasted sweet peppers for dinner over the weekend!

I'm going to make sure we have Bell peppers on hand more often during BBQ season (we get excited about BBQ season in Wyoming…we had snow earlier this week).

Now that's using a bed of coals to full advantage!

I love grilled veggies of just about ANY kind. We often grill up some poblanos and jalapenos when doing burgers or steaks. They're mighty good.

Hey Larry,

We like to roast peppers, peel them and then 'marinate' in caramelized garlic infused oil.

Please explain to me how your caramelize the garlic, and infuse the oil. I'd like to try that…

I love roasting peppers. I buy the tri colored peppers at Aldi (red, orange, yellow), and just core them, cut them in 1/8's, and toss them in a little olive oil or italian dressing, then just put them on the grill...flipping a few times, probably grilling less than 10 minutes total. Yum! If I have zucchini, I slice those in about 3-4 long strips and toss those in the oil or dressing too and grill alongside the peppers. Basic info, but very tasty.

hi SC...

Yeah - I often chop sweet peppers into strips to fry up with alfredo-chicken, but it's just a different flavor than roasted and peeled peppers. We love both, and look forward to July when our farmer's market starts up locally.
