Brussel Sprouts! New addiction!

I recently bought some brussel Sprouts and had them sitting around in the fridge, this evening decided to toss them into sole EVOO and some spices and roasted them.

Oh my! How wonderful!

What was even better were the leaves that had fallen off. They had crisped up an i could crunch on them like fries!

I am so making this again!

When I was little, I thought they looked so nasty & would seldom go near Brussels sprouts. Now I too love them roasted with extra-virgin olive oil! Pepper, onion, & garlic, too.

Oh they are one of my favorites. I like to cut them into pieces so most every bite has a little bit of brown on them. Yummy.

If you can spare the carbs, brussels are delicious, cut in half, tossed with olive oil, salt, pepper + some diced and briefly par boiled butternut squash. A cup of squash would add about 15 grams of net carbs or about 3.75 per each of 4 servings. It is a wonderful combination for a treat . . . but I love them plain as well.

I cut off the stem ends, halve, and nuke with just a little water til they're barely tender, then drain well, toss in a spoonful of bacon fat, let it melt and shake to coat them all. Pour out and arrange in a single layer on a parchment-lined baking sheet, sprinkle with garlic salt - roast at 400* til they're just starting to brown, then add a handful of bacon bits, toss and roast til they're done to my liking.

DH and I can clear a whole pan of Brussels sprouts cooked that way!

I usually just toss them in the pan with evoo and garlic. I know someone who shreds them and then roasts them. I've been meaning to try it that way.

I actually have difficulty controlling myself with these - I often start plucking them hot from the pan before I've called everyone in for dinner.

I have never liked brussel sprouts, but I saw your recipe Sheila and bought some. I'll be having them tomorrow with rib roast. I'll let you know if I'm a convert. 😁

I shred them (cut each in thirds horizontally), then saute them in bacon fat until soft. Then toss in some crumbled bacon and lemon zest... YUM!

I like to cut them in half and fry them in bacon fat, and then crumble the bacon over it-it's a complete meal that way.
