Chewy carbalose Poly D cookies
I couldn't find much of anything when I googled Poly D chocolate chip cookies. So I made one up. They taste amazing IMHO. They are chewy and look exactly like a "real" cookie.
1 stick butter- softened
¼ tsp EZ sweetz
¼ tsp liquid stevia
¼ cup Xylitol
About 1 tsp vanilla extract
¼ cup ground pecans
1 drop of black food coloring- optional
100g (about a cup) Carbalose flour
90g (about ½ cup) Poly D
¾ Tbsp oat fiber
½ tsp baking soda
3-4 oz Hershey’s sugar free chocolate chips
Mix all the dry ingredients except chocolate chips in a bowl and stir. Set aside.
Soften the butter and then cream together with all the sweeteners and vanilla. Add the egg and mix again. Add the ground pecans and mix until incorporated. Add food coloring, if using, and mix again.
Add the dry ingredients into the wet in 2-3 installments and stir. Stir in chocolate chips. Drop onto a parchment lined cookie sheet and bake at 325 for 6-9 minutes, or until edges are brown. These will spread on their own, no need to flatten as with other low carb cookies.
Yield- Not sure, but I'd say around 15-20 good sized cookies.

I bet those are awesome - wish I could use the poly-d - my intestines do not like ANY amount of it!
