Fudge (Coconut oil, Coconut butter, Protein powder)

I had a craving for fudge and sort whipped this up by trial and error as I went along. I had planned on using evaporated milk but the can I had had expired a couple of years ago.... So I used the half and half I had in the fridge instead.

These turned out sooooooooo good! I really like the texture, they are smooth and creamy. A titch firmer than "real" fudge, but I actually like these better.


INGREDIENTS

1/2 cup Instant Skim Milk Powder
1/4 cup Half & Half Cream
1/4 cup Unsweetened Almond Milk
1/2 tbsp Pure Madagascar Bourban Vanilla Extract
10 drops Capella Chocolate Fudge Brownie - optional
56 g = 4 tbsp Coconut Oil
56 g = 4 tbsp Raw Organic Coconut Butter - I make my own with unsweetened shredded coconut
10 g Cacao Paste - if you omit this add 1/2 tbsp more each of coconut butter and oil
1 level scoop Matrix Simply Vanilla Protein Powder
1 level scoop Matrix Perfect Chocolate Protein Powder
2 scoop Pure Stevia Extract
2 1/2 tbsp Swerve

DIRECTIONS

Measure dry ingredients (but not protein powders) into pot, add almond milk and cream and blend until smooth.

Add coconut butter, coconut paste and cacao paste and put pot on stove or double boiler and turn on low heat.

Stir until it's all melted and blended together.

A mass will form and separate from the oil, keep stirring/folding gently with a spatula taking if off the heat until it comes back together (the oil is blended back in as much as possible.)

Add protein powder and blend well, you may need to put it back on the heat a bit to ensure that the protein powder "melts" so that the fudge is not gritty, but keep the temp low.

Once it's all come together and is nice and shiny put it in a square silicone brownie pan lined with parchment.

Flatten with spatula and put a sheet of clingfilm on top, take a metal pan and squish it down on top to flatten out the top of the fudge.

Put in freezer for 30 minutes or more to set.

Take out of pan and cut into pieces. Can be stored in the fridge.

Nutritional info based on 100 pieces but I probably got 160 pieces, I cut them really small.

Guess it would help if I wrote down all the ingredients! :)

There should also be 1/4 cup cocoa powder.
