OMG, I'm sick! Easy Low-Carb Chicken Soup

I see so many posts asking what to eat when you're sick, and since today I came down with a cold, I decided to share what I make.

OMG, I'm sick! Easy Low-Carb Chicken Soup

2 skinless, boneless chicken breasts
1 quart (4 cups) of chicken broth
2 stalks celery
1/2 large onion, or one whole small onion
salt

Put the chicken breasts in a small soup pot and just barely cover with water. Add a teaspoon of salt. Bring to simmer, put the lid on and simmer for 30 minutes.

While chicken simmers, dice up onion and celery.

After 30 minutes, take the lid off of the simmering chicken, and skim off any foam or scum.

Add the chicken broth, celery and onions, bring back up to a simmer, put the lid on and simmer for 20 more minutes.

After 20 minutes, take off the lid, remove the chicken breasts to a plate, and shred or cut the breasts up into bite-size pieces. Add chicken pieces back to the soup and taste for seasoning - add more salt if needed.

That's it!

I know it's a drag to cook when you don't feel well, but maybe you can get your significant other to do it for you! It's still pretty easy, even if you have to do it yourself.

If you want, you could add other vegetables or herbs when you add the celery and onions - whatever you like. Today, I added a leftover half can of diced tomatoes and some black pepper and thyme. But it would be just as good without. If my stomach was iffy, I'd leave it plain.

I make mine pretty much the same, but when I have a cold, I like to add Cholula Chile & Lime hot sauce to it - loosens up the sinuses.

And sometimes I add drained,rinsed, and cut up shirataki noodles. Makes a decent chicken noodle soup that way.

Mmm, hot sauce is a great addition! As are shiritaki noodles, if you use them. I have a pack in the fridge, but I'm not sure how my tummy feels about indigestible fiber today, so I'm not taking any chances .

You can also easily make a Thai Tom Ka Gai version by adding ginger, coconut milk, and a little fish sauce and a squeeze of lime instead of some or all of the salt. If you have any fresh basil or cilantro on hand, all the better. Shiritaki would go great with this version, too. And sriracha if you like it kicky.

I keep bone broth in my freezer for times like these. Very good for your tummy.

I like to add some carrot and rutabaga.
I know it is a little more carbs but per serving I don't think it is too bad.

Thanks, Rosethorn! It's just a cold, so the wretchedness will pass soon .

And I love rutabaga! Turnips or daikon are also pretty lowcarb additions if you like them and have them on hand.
