Cookie Search: Wanted 0-2gcarb cookies

Anyone have a favorite Cookie recipe that is 0-2 carbs per cookie? It's getting close to you know what time and cookie cravings are around the corner.

I have on hand these specialty flours and sweeteners...
Almond Flour
Coconut Flour
Erythritol
Splenda

and these Extra's
Lily's SF chocolate chips
lemon, almond and vanilla extracts
Torani SF Vanilla and Hazelnut flavors

Linda Sue has a lot of great recipes on her site (LINDA'S LOW CARB MENUS & RECIPES ).

I suggest the butter cookies, coconut crisps, lemon butter cookies, Lori's Snickerdoodles, and the pecan sandies (if you have Carbquik). There are plenty of others there to check out, too. But, these are all highly rated and I have tried all at one time or another and enjoyed each.

If you really want to delve into LC cookie making? Search the sticky on Kevinpa's recipes. You will need to get some specialty items, but that man made some wonderful recipes and some of the best low carb cookies I have ever eaten! He is greatly missed.

Are you still on induction?If so there proably no cookies. Have you thought of cheesecake or mousse using cream?

I only picked one recipe from Linda Sues website. Look at all of her recipes and if you see this beside the recipe * it's induction friendly.

Here are a few cookie threads.This thread has alot of cookie recipes. I checked it out a bit and there are many for less than 2 grams of carbs.

I don't know why I didn't think to check Linda's site! Thanks for the reminder and No I'm not on induction, I can go up to 60carbs but I do better closer to 40-ish.

I've been making cheesecake muffins for something creamy/sweet but I also want something crunchy. So far I haven't found anything I like to satisfy nacho cravings LOL so I figure a cookie will have to do.

For Nachos, I'll sometimes take a low carb tortilla and cut it into wedges, then either spray it with oil and bake with some spices, or deep fry it and spice afterwards. Admittedly, it does not make a lot of nachos, but I load 'em up with cheese, a little salsa and sour cream (or sometimes I top them with rotel/cream cheese/chopped meat recipe OR the buffalo chicken dip, mmmmmm!!!!). It's usually too carby for a snack for me, but makes a nice meal!

What about one of the meringue cookie recipes? They are basically just egg whites and sweetener. There are a couple of recent threads on them if you're interested.

Cheeky, Why not use mini bell peppers or celery pieces instead of chips? Get the crunch..The bell peppers would be a better flavor match..

Chicka - yes I've done that too, it's not quite the same but it's probably the closest we can get to regular nachos. It definitely satisfies the cheesy gooey craving and you can put regular nacho toppings on there too....but it's just not crunchy crunchy like a tostito.

Rose - Meringues, even the regular high carb ones, just aren't my thing. They bother my teeth for some reason, the texture maybe? Thanks though!

Party - I wish that worked LOL I'm just not that into vegetables. I've gotten a lot better about eating more veggies since the first time I started Atkins but I'm still not that good.

Have you tried the cheese "chips" - just cut cheese slices into quarters, arrange on a parchment paper-lined baking sheet, leave a little space between each one as they spread out a bit as they melt - bake at 400* til bubbly and browning just a bit, then let cool.

They're quite crunchy and good!

To satisfy nacho cravings, I like to melt cheese on pork rinds in the microwave. Not exactly the same but I really enjoy it.

No not yet, I keep finding recipes where I'm off by one or two ingredients. I did find a health food store nearby that might sell zero carb cookies by Justin's Bakery. Never had those before, might be worth it to buy some and check them out
