Weird stew question

Hi guys, I've been invited to a friend for dinner, and she's planning on slow cooking a pork roast with onions, and carrots. Will the carbs infuse in the meat, or can I eat just the meat and stay lc? Any help would be greatly appreciated

I don't think carbs will infuse in the meat, so you are safe there. If she thickened with flour, you might want to leave most of the gravy.

I am not sure that they "infuse" the meat. I usually just eat the meat and a few onions and have never had problems. Where the difference may come in is that some people brown the meat in flour first, although not all. Also the gravy may have flour in it as well. I am not sure how good of friends you are, or if you could ask first.

Yeah, you're pretty well off with meat, a few carrots and minimal gravy.

If you were asked you could say to drop in a peeled turnip and a few stalks of celery...
