Low Carb Chicken/Bacon Creamy Chowder
Just wanted to share something I threw together last night.
I really just toss crap in and hope it works, and this one REALLY did.
2 large cartons of chicken stock (Kirkland)
half can of corn
rotisserie chicken, pulled
simmered that for about 45minutes.
1 tall carton of Heavy WHipping cream. the 1/4 gallon I think it is.
added another 2-3 TBLS of chicken bouillon.
at this time I added 6-8 strips of bacon I fried, and chopped in to small chunks. ALSO added the bacon fat as well. This made a NICE difference.
tossed in some fresh basil, and some Italian herbs, as well as garlic powder, salt and pepper to taste.
let that go another 15-20 mins.
then I added 1/2 head of cauliflower, chunked up. I am NOT a fan of this, but it added some chowder aspect to it, and didn't jack the taste at all.
I am in a hurry, but thought id share.
Ill try to get a little more precise quantities later, but it turned out extremely good. and I would estimate the carb count at less than 5 per serving.

This does sound good but the carrots and corn are not something most of us low carbers would add because of the high carb count, even in small amounts.
