Linguica sausage?

My favorite pizza ever was when Papa John's had some kind of special pizza with linguica sausage. Best. sausage. ever. Have never seen it since.

Anybody every try Gaspar's linguica or chourico? I signed up for their mailing list... maybe I'll get a promo code. I bet shipping is a beast...

My husband's family has some Portuguese recipes that their grandmother brought over with her. When trying to substitute for Portuguese sausage (Linguica being one of them), the family generally uses an Andouille (which is easier to find locally and is smoked like the Linguica) and then adds extra garlic and some smoked paprika to get closer to the taste. Not sure if that will work for your needs, but could give it a try before shelling out the money for shipping.

Edited to add: I just spoke with one of his cousins, she also said to add some oregano and, if you want, a bit of red wine (and if you like it even smokier, a bit of liquid smoke). She takes the Andouille out of the casing, adds the the additional ingredients, forming them into sausage patties. This is traditional for their Christmas celebration and she says is very close to what she remembers her Grandma serving as a child. Whether or not it will taste like Papa John's? LOL, no idea.

Yup... shipping was nearly the cost of the sausage. Oh well, not paying $10 a pound.

I'll try the andouille trick or try to smoke my own- I did find a recipe.
