If you go to the top of this page, there is a box with a blue panel under it with various links on it, one of which is SEARCH. Click on SEARCH, and then under "Search Forums" type OMM in the box. let it show you the threads, and you will find lots of discussions, variations of recipes, etc. Also, you can use your favorite search engine to look for Low Carb One Minute Muffins, or Low Carb Muffin in a Minute. Most Low Carb blogs have several recipes. They are also referred to as Mug Cakes. They are pretty forgiving, and you can quickly figure out the basic recipe, and then start adding your own flavorings.

I don't care for the nuked muffins. I find them too weird in texture. I make a batch that makes 12 regular or 6 jumbo muffins and love them. Here's the recipe I came up with...

1 1/4 cup flax seed meal
1 tsp baking powder
1 Tbs cinnamon
1/2 tsp salt
24 drops EZ Sweet (or whatever to equal 1/2 cup artificial sweetener)
1/2 cup davinci vanilla syrup
4 large eggs
1/4 cup oil
1 tsp vanilla
1/3 cup sour cream

Whisk dry ingredients well. In separate bowl, whisk liquid ingredients well. Pour wet into dry and whisk thoroughly, making sure all the flax is wet. Let the batter stand for 10 minutes. It will thicken quite a bit!

Divide into 6 jumbo muffin cups that have been liberally sprayed with cooking spray. Bake at 350 deg F for 18-19 minutes. Toothpick inserted in center should come out clean.

I use a mini rubber spatula to run around the edge of the muffins and then they lift out cleanly onto a wire rack to cool.

I calculated that they're about 6gm of carbs, 95 calories, 8.8gm fat and 2.7g protein.

They're my favorite now with coffee in the morning. Yummy and keep me regular.

These sound very yummy. Will have to try them next week.
I find the texture funny in the original as well so now I do the original recipe and add a bit of sour cream, a few blue berries or raspberries and then fry it like a pancake. Top it with a bit of peanut butter and I am satisfied for hours!
