Hey lady, when I'm doing chicken tenders, I just roll them in parmesan instead of crumbs and pop 'em in the oven...after I've sprayed the foil with Pam.

I've also mixed the parmesan in with low carb bread crumbs and used the egg wash, crumb mixture to bread them.

If you want the creamier, check out Miracle Whip, Helman's, or Best Food's website for the recipe they show in the commercials. I've tried just mixing the parmesan into the mayo and roasting on a rack...not bad, but still tweaking it.

As I've said before, I like the flavor of the parmesan. Wish you luck, maybe someone else can help you.

Just parmesan and mayo or mix crushed pork rhinds with the parmesan in equal parts...I like the second version best.
I pop em under the broiler at the last miute for some extra color. And the crumbs left on the sheet are so yummy.

Dip in egg and coat with the parmesan, with chopped pecans (or other nuts).

Thanks everyone...........I mixed the parmesan cheese with some almond meal - absolutely delicious!! Baked it and honestly thought I was cheating - even my husband liked it.

Good idea. Similar to chopped pecans and parmesan and I might do this next time.
