Impossible Chocolate Pie

I made a very similar pie to the one in #147 of this thread: Carbquik Baking Flour



Let me just say it is fantastic! Looks like a brownie but when you cut into it, it's pie! It has a flaky top crust but a thick custard inside. Very good for chocolate cravings! But it didn't all fit in a single pie pan and it didn't cut out of the pie pan neatly so I modified that part... use nonstick foil or parchment paper, a straight sided pan and a bigger pan!

Impossible Chocolate Pie Squares

3 eggs
1 c cream
1/2 c water
1/4 c butter, melted
3 T dutch processed cocoa (just right!)
18 drops EZ-Sweetz, 12 drops vanilla stevia, 1/2 C erythritol (just right!)
1 c carbquik
1 t vanilla

Mix it all together. 9x13 *nonstick foil-lined* glass baking dish, 350 degrees for 45 minutes, leave in warm oven for 1/2 hour. Refrigerate until the next day (do it! ). Pretty it up with some whipped cream if you want.

Jen..... mmm, mmm, mmm. Looks and sounds REALLY good!
12 drops vanilla stevia equals how much sweetening equivalent?
Also, if using a larger pan, would you need to bake it as long?

The bake time is my best guess for the bigger pan. My pie sized one was 30 minutes. There was about 1 1/2 pies worth of batter. You can use whatever sweetenr you want- just taste the batter! But I don't recommend more than half Splenda or sucralose- Splenda and chocolate do not mix well.
