Mounds Layer Cake

OMG I just came across a traditional cake recipe I am definitely going to have to low-carb and take to my mother for her 90th birthday in April. Her all-time favorite candy has always been Mounds. You've got to check it out over on ConfessionsOfACookbookQueen site. The picture is just about the most gorgeous cake I've ever seen. I think it will be pretty easy to low-carb, too!

Sure will. Her birthday's the end of April, so it'll be awhile yet.

Jen, I plan to use coconut cream I think.

Awwww, my birthday is the beginning of April! Here's hoping it's easy to decarb and you get it on the very first try lol. (Like your mom, Mounds is my favorite. But, if not Mounds cake, it will be LC Boston Cream Pie for me again this year)

WOW!! That cake looks so good. I can't wait for you to LC it for us. I wouldn't have a clue how to do that, but then, I'm no baker.

Well, I'm making the regular cake version for Mom. She doesn't like artificial sweeteners. But I do plan on low-carbing it for myself eventually. Haven't really had time lately. Spreading myself too thin posting recipes on 4 sites. I'll defo post the LC version here when I get around to it. Just don't know when that will be.
