Cheesecake Bars - 12 servings at about 5 carbs each
2 32-oz Yoghurt, drained overnight
3 T Splenda
1 T Vanilla
1 c sour cream
ground nuts - I used walnuts
1 can pineapple slices, drained - optional
Beat first 4 ingredients until well mixed, then mix in sour cream.
Butter bottom and sides of 9x13 pan, add ground nuts and let adhere to bottom/sides of pan
Add yoghurt mixture, smooth top. If you have fruit, put it on top....
Bake at 325 for about 75 - 80 minutes.
I make these bars for my granddaughter who is gluten intolerant, but at about 5 carbs/serving I can enjoy one too every now and then. My piece is without fruit.
