Successful vanilla buttercream with DaVinci syrup!

Just thought I'd share that the basic buttercream recipe adapted version below:

-2 cups powdered erythritol (I used Confectioner's Swerve)
-4 tablespoons butter, softened (I used Earth Balance Soy Free Buttery Sticks since I had them just sitting around)
-2 tablespoons unsweetened almond milk (mine was unsweetened vanilla)
-2.5 tablespoons Da Vinci Gourmet syrup of choice (sugar-free caramel!)
-1 teaspoon vanilla

I think one of the main reasons I've had so much trouble with finding a basic vanilla buttercream using erythritol is that people are wary of the cooling sensation. Nothing against cream cheese, but I don't always want that in my frosting, you know?

I did get a bit of the 'cooling' effect with this at first, but the longer it sat out, the less of an issue it became. I've heard mixing sweeteners helps, so maybe the splenda in the DaVinci's balanced it out?

Either way: yay! And of course, photographic evidence:

Ooo, that looks awesome! Now if I could just find a cake that tastes like "wedding cake" (the floury white mess that they call that anyway) DH would be ecstatic.

Why thank ye all kindly! And yes, please feel free to pass along any more cake and frosting recipes. If there is one thing I could literally never ever get enough of? Yeah.

But of course! This was a half recipe of Maria's Extreme Chocolate Birthday Cake with a few substitutions:

-1 1/4 cup Zsweet (or erythritol)
1/8 tsp Sweetleaf vanilla creme
1 3/4 cups almond flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp Celtic sea salt
2 egg whites
1 cup unsweetened almond milk
1/2 cup coconut oil or butter/Earth Balance Soy Free
2 tsp vanilla extract

It came out delicious, although with a weird raised edge - you can kinda see it in the pic below. I've never made a cake with almond flour before so I was testing this one out.
