Does anyone have a good white cheese sauce recipe?

Like the kind they serve in mexican restaurants?

I mix soft cheese (philidelphia soft cheese) with a splash of cream in a pan and then melt chedder and a bit of blue stilton into it.
No flour, just cheeses.

In a pan, put half a cup chicken broth and a T or 2 of either ro-tel or salsa. Bring to a simmer. Alternate adding slices of white american cheese and oz or so of shredded pepperjack cheese or monterrey jack cheese. Stir often and add cheeses until the mixture melts and is as thick as you want it. I often add garlic powder too. Do not boil and if the cheese is clumpy, you aren't using enough american cheese- it melts better.
