Low Carb McGriddle Copycat
My family really likes McDonald’s Sausage McGriddle sandwiches, and even though I’m not a McD fan these sandwiches are really tasty. I played around with the English muffin recipe on Jennifer Eloff’s website and came up with a low carb copycat. Toasting the muffin is crucial to the success of this recipe.

Low-Carb Maple Sausage Breakfast Sandwich

1 egg
1/4 tsp. maple extract (I used Mapleine)
3 drops EZSweetz (or use equivalent sweetener of your choice)
2 tbsp Jennifer’s Gluten-Free Bake Mix
1 tbsp ground flaxseed
1/4 tsp baking powder
Pinch of salt
2 tbsp shredded mozzarella cheese
One cooked sausage patty

In a small bowl, whisk together egg, maple extract and EZSweetz. Add bake mix, flaxseed, baking powder and salt; stir to combine. Fold in cheese. Place batter in a small round microwavable container. Microwave on HIGH for about 1 min. 10 sec. (until muffin is not wet in center.) Remove muffin from bowl and let cool slightly. With a serrated knife, cut muffin in half. Toast muffin halves and make a sandwich with sausage patty. Makes 1 sandwich.

I don't see why not. They may be a little soggier upon reheating, though. I'd reheat in a toaster oven or regular oven instead of the microwave.

I think they should freeze nicely.
