Other than stews, soups, ribs,roasts, what else do you use your slow cooker for?

I am new to this method of cooking. Love it! Don't know why I waited so long to get one. I have the Ninja Sear and Slow cooker and I love it! It suits my busy lifestyle as a nurse that has to be up early in the morning to get to work to start my shift at 6:45 am. I work 12 and 16 hr shifts so I am sooo not in the mood to spend hours in the kitchen when I get off work. I usually throw everything in at night and its ready by the time I get up in the morning. Planning on buying a smaller but cheaper one soon to make smaller meals and perhaps desserts.

Anyone have any unique slow cooker recipes?

Ribs! I can fit 3 racks of baby backs, ends up, in my large oval crockpot. First I cut slits into the fatty side. The I rub them with red wine vinegar and again with a dry rub- any kind without sugar. I curl the racks around my crockpot (if there is extra space, wad up some aluminum foil and fill it in). DON'T add any liquid and cook on high for a couple hours. I then drain the liquid off and cook another couple of hours until they are falling apart. I lay them on a foil covered cookie sheet, brush sauce on them, and broil in the oven for about 5 minutes.

YUMMALICIOUS!

Also, corned beef (skillet fry the edges in a fat of some sort first) and a few carrots, lots of turnips, and near the end, cabbage wedges. Add a can or two of beef or chicken broth, the seasoning packet that came with the corned beef and then fill the rest of the way with water. Low all day or high for 4 hours or so.

I used my slow cooker twice this week to get spaghetti squash soft with no crunch. After nuking a squash for about 10 minutes, I scraped out the squash and put in my slow cooker. I then put chicken on top of the squash and cooked for 5 hours on high. Very good.

A crock pot makes the BEST carmelized onions! Just chop them up and plunk them in. Cook on high until they are brown enough for you.

No oil or liquid added. I take off the lid for the last hour and cook on high to simmer off all the liquid that the onions have released. You could add butter or broth if you like but I'm trying to do "low cal" as well as "low carb" so I just cook mine plain.

In my pre-LC days, I used to make a wonderful Dulce de Leche recipe from Lora Brody’s Slow Cooker Cooking. It’s the natural sugars in the milk, as well as the sugar, that caramelizes, so I believe this might work with a sugar substitute such as Swerve or Ideal (although I haven’t tried it yet). This recipe requires a small slow cooker (I use a 3-qt. size). Here’s the original recipe:

Dulce de Leche

1 vanilla bean, split lengthwise
4 cups whole milk, divided
1 2/3 cups granulated sugar
¼ cup water
Large pinch baking soda

Place vanilla bean, 3 cups milk, sugar, water and baking soda in slow cooker insert; whisk mixture until combined. Cook on HIGH for 9 hours uncovered, then remove the vanilla bean and whisk mixture gently. Use a dull-edged butter knife to carefully scrape down the crust that accumulates on the side of the cooker. Do not skim the foam.

Continue cooking another hour, stirring every 20 minutes, until mixture is a medium-caramel color and has thickened a bit. Heat the remaining 1 cup milk (I did this in microwave.) Turn off the slow cooker and stir in the warm milk (this prevents the mixture from hardening when refrigerated.) Cool mixture – it will thicken slightly as it cools. Refrigerate it in a tightly covered container.

I make anything and everything I can think of in my crockpot. I make Linda Sues casserole recipes in mine, along with everything else mentioned. I love to make my bone broth in it because I don't have to worry about my stove top being on. I jut stick all of my ingredients in, set it in low, and let simmer for 24-48 hours. No work, no fuss!
