Need lunch ideas on the go! Ideas, anyone?
 
Hi everybody! My fiance and I are going back on our low carb diet. We've had success with it before. Buttt, we have a problem. I work in a sheriff's office, and have access to a mini kitchen, with a fridge, microwave, and toaster oven. He works on an ambulance all day and stays on the road. So he has absolutely no access to a microwave. What i need are some ideas of what he can bring for lunch that he can eat cold or at room temp. Any ideas?:help:

Hello and :welcome:

I think any type of cold cuts, pepperoni, cheeses, pickles, olives, boiled eggs, tuna, chicken and egg salad and if you use them you could fill low carb pita bread or tortillas with any of these, salad fixings, cold chicken, nuts, berries, veggies and dip.

I'm sure there's lots more but that's off the top of my head.

Get him a really good thermos, too. One of the wide mouth kind so he can have chili or hot foods occasionally:)

I like to bring salads to work for lunch: grilled chicken, BLT salad, chef salad, potato salad using cooked cauliflower florets instead of potatoes. Also for break smaller snack like custard or peanut butter on celery,

Sandwich wraps with Joseph's Lavash bread
Almond Buns (ketocaveman) with sandwich fixings or a burger patty
Lunch meat wraps with cheese and veggies inside (ham rolls with a twist)
Seafood salad (packet of Krab or chopped shrimp) mayo, purple onion, white vinegar and sweetener)
Mini meat or quiche cups (beef/pepperoni/ham, cheese and a little egg)
Any leftovers cut up with cheese chunks
Almond butter bread and peanut butter is a great and filling snack
Any of the impossible pies with car quick are very filling

I have a thermal type lunch box and about 6 of those small plastic freezer blocks. I try to give husband salads with lunchmeat, cheese, veggies, blue cheese dressing...then add a couple of freezer blocks and a can of pop. He keeps lunch in his car and goes out to car for lunchbreak. Don't forget to pickup a box of plastic forks, too. I need to get a wide mouth thermos so I can send warm items now and then, good idea.

- I eat a lot of avocados for lunch (usually.5 per day) - it's easy to eat without silverware (just fold and squeeze!)
- Olives are a great option
- Lettuce wraps instead of sandwiches - hold together with a toothpick
- cheese (if you don't have an intolerance)
- I don't always mind cold meat but that's so individual
- hardboiled eggs (by themselvs or as a salad)
- celery with cream cheese
- Any kind of dip with pork rinds
- I make LindaSue's pork rind pizza and top it with my favs, if you normally like cold pizza this tastes just like it! (my hubby loves it and he isn't low carb)

My hubby is in a similar situation. He doesn't care about variety so it's pretty much the same thing every day. Tuna salad or pimento cheese. He spreads/dips on/with pork rinds like crackers. He eats in a vehicle, so he carries a cooler/lunch bag with an ice pack in the bottom.

When I have to eat on the run, I like to make a lettuce wrap:

Romaine lettuce leaf
Place a slice of lunchmeat on top
Spread with 1 tbsp cream cheese (or mayo)
Add some sliced green and/or black olives
roll up lengthwise and wrap in plastic wrap

I wrap it so that I can peel back some of plastic and not make a mess with it. I got the idea from Jimmy John's Unwich. :D

I make a dozen "baked" scotch eggs and freeze them individually. They are easy to bring for lunch or carry in my purse when I'm shopping.

I use ground turkey instead of sausage and add pureed onions and indian spices to mine, but you can get as creative as you want.
