Carb Legal Meatloaf
I grew up on meatloaf and still enjoy it. I've been cooking this Carb Legal recipe for sometime and find it very tasty with very few carbs.
Bill’s Carb Legal Meatloaf
1 pound ground beef chuck or sirloin
2 eggs, slightly beaten
1 cup soft low carb bread (two slices)
1/2 cup of minced onions (yellow or white but not sweet)
1/4 cup of green pepper or mild jalapeño pepper
3 teaspoons of horse-radish
2 teaspoons of salt (to taste, I only use 1 teaspoon)
1/2 teaspoon of dry mustard
2 tablespoons of low carb milk
2 tablespoons of salsa (drained)
3 tablespoons of fat/drippings (I use olive oil)
1/4 cup water
Fold in eggs with the ground beef. Mix in other incidents. Shape into loaf.
Cook for 1 1/2 hours at 350 degrees, basting with liquid from bottom of pan every 15 minutes.
Let stand ten minutes. Slice into serving pieces and enjoy carb legal meatloaf.

Your meatloaf sounds very tasty.
Last night we had Lc tomato soup, meatloaf, green beans cooked with bacon
and some low carb cookies with coffee. Very good meal.
We have some jalapenos in the garden that have gone red. So I will
put them in the meatloaf next time.
