Carb Legal Cheese Crackers
 
I found this receipt on line and substituted lupin flour for all purpose flour.
As I do the math these are very low carb and make a great snack especially when pepperoni is added to the top!

Makes about 3 dozen:
1/2 cup butter
1/2 pound extra sharp cheddar chesse (better cheese makes better crackers)
1&1/2 cup of lupin flour
1/2 teaspoon salt

Preheat oven to 350 degrees. In the meantime, cream together butter and cheese.
Mix flour and salt. Then add flour mixture into cheese and butter mixture, mix well.
Roll dough into 1 inch balls and place on ungreased cookie sheet. Flatten and prick with fork. Bake 12-15 minutes.

I have made several batches and really like them.

They sure look good! Lupin flour...never heard of this? What is it made of. Can you get this at the grocery store?

Yes, the Corvette is a C5 and I gave it to my wife for an anniversary gift. Lupin flour is made from lupin beans. It has 12 carbs with 11 fibers for a net carb count of 1. I've used it for the crackers, to make fried chicken so far I haven't found anything I can't substitute lupin flour in the place of all purpose flour. These cheese crackers look yummy. I will have to do more experimenting with lupin. I use it in my snack cake, but nothing else at this time.

Congratulations! you are the first person to figure my name out and I'm on a lot of different boards. We still have a 90 vert we bought new and I adopted the name when we paid it off and I became interested in the web. I get to drive the C5 when it's out of fuel, needs service or dirty:)

Bill, when you used the lupin flour for fried chicken, how did it taste? Fried chicken is my absolute favorite food in the world, and I have not found a decent replacement for good ol' flour....not pork rinds, nada! :sick:

I dipped the chicken in an egg wash then the lupin flour and fried it olive oil. It tasted GREAT to me. I didn't tell the wife I had changed flour and she didn't notice. Today I'm going to try lupin flour in our bread maker, I'll report later on the outcome.

1/4 cup of lupin flour = 1 net carb, so there's 6 carbs of lupin flour for the whole recipe.

Mix them together with a mixer until creamy... usually things like butter and cream cheese are soft... room temperature... before mixing.

I place a paper towel in the bottom of a tupperware container and place the crackers on the paper in layers. So far the crackers haven't lasted long enough to get stale! I'm really glad you liked the recipe. I'll be posting homemade carb legal bread using lupin bean flour soon.

Thank you, Bill, for this recipe. These are fantastic. A great alternative to high carb chips and dip. I just had these crackers with some guacamole, tomato bacon dip for breakfast. I think these might be a good crust for a chicken pot pie - sturdy yet buttery tasting and flakey. I would love these for a pizza crust. They're a little more solid the next day - so that might work. I've used Lupin flour for some time now and never get tired of the taste. In fact I really like the taste of Lupin.

I bumped the Lupin Flour thread up for you. Maybe Yaz or some of the other posters can answer about lupin pizza crust.

Thanks for this recipe. I am looking for a good low carb cracker, and will try this tomorrow after I get some cheese. I assume you grate the cheese before creaming it with the butter?

I used shredded cheese. The dough was lumpy and thick, and easy to form into balls. I flattened with my hands and then made fork marks. I am going to try making these subbing the cheddar cheese with low fat cream cheese with pizza seasoning for a pizza crust.

I used block cheese (1/2 regular fat and 1/2 lower fat) cheddar and creamed it in my vitamix with the butter, then added the lupin flour until I came together.

Redeemed, did you use preshredded cheese? I understand that it's coated with something that keeps it from sticking together.
