Persimmons! Aaackk, need recipes!

So a friend gave me a sackful of Fuyu persimmons, and today I processed them into puree - I have TWO QUARTS of persimmon puree!

Please, if you have ANY kind of persimmon recipes that use puree - lay 'em on me - LC or not!

Bread, cake, jam, whatevah..........

ooo--I adore persimmon pudding Char--let me see if I can find my stepmother's recipe--with a vanilla rum sauce on top it is to die for--

ETA: The one the food network has: persimmon pudding with hard sauce is practically identical to my SM's--highly recommended, and can be made in advance of thanksgiving. So good!

Start Date: Off and on Lw carb since October 2003
We had persimmons in Califorina. My very favorite was to simply purée the persimmon with a little nutmeg (no sweetener needed), and serve with whipped cream...like pudding. Persimmon pudding with hard sauce is very good too, as are cookies. Pretty high carb though.
