SF Jello - does it causing any stalling issues for you? I was thinking about buying some.

I used to eat sugar free Jello all the time until I burnt myself out on it. The pudding is much more carbier.

I eat it a lot, it's great for having something sweet after all those meaty dinners... I make it with diet sierra mist (1 C boiling water + 1 C diet sierra mist) and it makes it fizzy... really more exciting than just plain jello
It hasn't had any adverse affects with my plan either

You can buy flavored gelatin sweetened with sucralose on Amazon. I bought some. It isn't quite the same as the brand name Jell-O, but it's pretty good.

Just use flavorless beef gelatin + liquid stevia +whatever flavor alcohol based extract you like. It will have carbs from the extract but that's all. I usually do 8 cups of water, 4-5 tablespoons of beef gelatin (depending on if you want it firmer), 1 tablespoon or less of extract and liquid stevia to taste. Calories should be about the same as the packaged sugar free jello and your protein will be more twice as much or more. I think the carb count in general for alcohol extracts is .5 per teaspoon. Can add food coloring if it makes you feel better to have it colored. :)
