Thin cut beef ideas?

I have quite a lot of this in the freezer as it was on special a couple weeks back. It's nice grilled or as fajita meat but other than that I am not sure what interesting ways to use this. I could stirfry but have an amazing recipe that uses boneless skinless thighs slow cooked and makes a fabulous sauce that I tend to prefer? Anyone have an awesome recipe ?

A salad?

I bought a grilled tri tip "sandwich" made into a salad yesterday and it was goooood. It was chopped leaf lettuce, tomato, red onions, jack cheese and the meat sliced up in thin strips. It had some kind of spicy mayo dressing.

I'm thinking about going back.

Swiss steak

Use a LC wrap and make a philly steak and cheese

If it is thin enough to roll up, make enchiladas using the steak as the tortilla.

How about a stir fry with soy sauce, garlic & ginger?

I was going to suggest Arrachera Nortena but seeing your location, I'm sure you've already thought about it. Very much looking forward to my first meal at El Fogon in 78 days

Oh my gosh, we have a Brazilian steakhouse in Playa del Carmen that is awesome. And with a locals discount three people can eat and have a couple alcoholic drinks for about what it costs for 1 at fogo or Texas de brazil. So yummy. Since LC wraps are not available here I was wondering how it might taste to make up the cheese steak filling and wrap in cabbage or romaine ? Kinda lunchy maybe I will make some up to snack on and send with hubby for the week..

LindaSue has a rouladen recipe, http://www.genaw.com/lowcarb/rouladen.html - I haven't tried it but it looks good!

Or bracciola - Italian-style stuffed meat rolls. Just make individual ones instead of one big one, and sub LC breadcrumbs, or crushed pork rinds, for the regular breadcrumbs:

Italian Bracciola

1 ½ lbs. Flank Steak trimmed, butterflied, and pounded
3-4 slices prosciutto
3-4 slices provolone
4 T pesto

4 T pignola nuts (optional)
½ c bread crumbs
1 small jar of roasted red peppers
6 fresh basil leaves

Cooking directions: 1. Lay the meat out flat on a smooth surface. 2. prosciutto, provolone and the other ingredients on top. 3. Roll up the steak and tie it with cotton/butcher’s twine. 4. Heat oil in large skillet and brown evenly on all sides for 10 minutes. 5. Add sauce to cover meat in sauté pan. Cover and simmer for about 1 hour until tender. 6. When meat is done, place it on a plate, cut twine, slice and serve with sauce on top. 7. Consider serving with pasta, couscous, or polenta. Serve with Italian garlic bread and a simple fresh green salad.

Philly cheese steak sandwiches without the bread.

Is that the one on 10th? We were going to go last January for a friend's birthday but she had other plans. We had walked in to check out the menu and were offered a discount as well as a bottle of wine with dinner. We'll be trying it this winter for sure! If you like I can mule some lc wraps down for you!

It will work well with cauliflower fried rice. I have thinly sliced venison strips that I have used, and it was great! In fact, I am making that this week.
