Food Allergy Recipes for Low Carb
I'd love to start a thread of recipes for those who can't tolerate dairy, tree nuts or any other food you are allergic to. I often can't use many of the recipes on the forum because they have nuts or dairy. I know some of you are allergic to soy, too.
So, do you have any good allergy free recipes you depend on to help you stick with low carbing?
Raw Sunflower Seed Sour Cream
I used this for a LC pumpkin bread recipe this past week and it worked great. Next time I'll cut the recipe in half because I didn't know what to do with the leftovers.
1 cup raw sunflower seeds
1 c. water
4 plus Tablespoon of lemon juice
1 garlic clove, pressed (or 1/2 t. garlic powder)
3/4 tsp. salt
Blend all ingredients until smooth. It thickens up as it sits in the fridge.

I will put other things up .
My only food allergy is garlic, of all things. Once in a while, I can get away with the tiniest bit, but most all pre-fab foods have garlic in them...even a lot of the tomato products. Maybe it's used as a preservative. I used to love garlic until it stopped loving me. :sad:

I love these muffins. I tweaked a recipe I found on Linda's site. I am dairy and nut free. The original recipe called for pecans which I deleted. I am finding that I can replace almond flour for sunflower seed flour and it turns out fine. Sometimes the nut will turn green but it doesn't affect the flavor.
1 c. sunflower seed flour (or 1/2 c. coconut and 1/2 c. sunflower seed flour)
1/2 cup flax meal (2 ounces)
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1/4 cup erythritol
1/8 tsp. Kal Stevia
2 Tablespoons melted butter (or 1 Tb. butter & 1 Tb. coconut oil)
1 teaspoon orange extract
2 teaspoons vanilla
2 tablespoons coconut milk
2 tablespoons water or orange juice
Preheat oven to 350. In a small blow, stir together flours, baking powder and baking soda, salt and sweeteners. Melt butter or margaine. Add to flours mixture
along with extracts, milk, water, eggs and stir. Spray muffin pan or use paper muffin cups. Divide batter amoung 6 cups. Bake 15-20 minutes until golden brown. Better to underbake so they won't get too hard. Serve warm.
We won't be able to eat everything we put up here. Different allergies for people.

1 tsp. baking powder
2 tsp. gluc
1/4 c. coconut milk ( more if needed )
5 baby corn ( grind in food processor or blender)
3 T. ghee or coconut oil
Take first 5 ingredients put in bowl mix well.Take next 4 ingredients in another bowl mix well. Now blend wet with dry in 3 intervals mix well after each time. Let sit for 5 minutes to if you need to add more milk. I wanted it tight because I'm making stuffing with it.Pour into a loaf pan with greased parchment paper.
350 for 35 minutes.
I will put up my stuffing recipe after I try it today.
The sunflower cornbread sounds good.
Is there a substitute for the baby corn or can it be left out? I as because my sister has about 31 allergies and corn is one of them, but she used to love cornbread. I'd like to be able to make her some for Christmas, but she can't eat the baby corn either nor almond flour.

Grammy G, you can usually find the baby corn in a can in the oriental section of the store.

Yes that's where you find the baby corn. You've never bought them Grammy? I use them in stir fries and other recipes.
Nigel no you need the corn.There's also corn resistant starch sorry Nigel.I use the baby corn because I tried to use the popcorn once and that was a disaster. So I needed to find another way to get the corn taste. I understand 31 allergies 'cause I've 51 food allergies.Nigel has your sister tried looking at the Paleo . I eat a lot of Paleo.They use alot I can't use but so does low carb. So I'm looking for a happy medium.
We have different allergies for different people.
If you think you might have a problem with a food try this.Take you pulse(write it down) before you eat the questionable food.Then take your pulse after eating the food. Like this ,say my pulse is 78 normally then I eat pears and it goes to 162 in less than 30 seconds, I am allergic to pears. It's alot easier this way than how I use to do it.

You can make Ghee on the stove but you have to keep an eye on it so that it does burn. I make my ghee in my crockpot. Ghee is where you take out the dairy from butter.
Take 3 or 4 lbs of butter ( now you can use regular butter or Kerrygold which is grass fed butter , I have to use this.)
Put in crockpot on low this will make the protein brown up and get crusty. This takes about 2 to 3 hours then put a paper towel in a stainer and pour the ghee into it over a bowl. You will have beautiful ghee and no dairy.Then pour into a glass jar . I use canning jars.

Stuffing for Turkey Day.Sorry guys I have no pics. I'm getting my camera fixed.
3/4 of loaf cut into cubes ( dryed out in oven for 3 hrs. at 200 degrees)
1/2 onion chopped
1 stick celery sliced + leaves
1/4 c. mushrooms chopped
2 T. ghee & 1 T. bacon grease
1/3 cup cranberries ( opitional chopped)
1/2 c. bone broth chicken ( i use to heal my gut flora)or bullion cube broth
2 T parsley ( chopped if using fresh)
1/2 lb. sausage ( cooked and set aside)
Cut your loaf into cubes , put on cookie sheet dry out in oven.
In a fry pan add onion, celery, mushrooms, with bacon grease and ghee. Take off stove and add chicken bone broth & parsley. Now add sausage and cranberries , then bake in oven for 30 minutes @ 350.
This is the best lc stuffing I've ever had. YUM!!!

Sorry guys that is the sunflower loaf I bake and used for the stuffing. I used 3/4 because I ate 2 peices. It will not brown in the oven just dry out.
Also I use d/f yogurt in my recipes sometimes. And alot of coconut milk or oil.
I use nutitional yeast ( found in bulk bins). I use it for kale chips ( Love these), soups , in meatloaf instead of cheese.
I also mix it in crackers for another flavor.
Grammy I know you can't use tree nuts and I don't use anything with grains or flax. I have found I can use chia seeds ground in place of flax seed.
Here is another little tidbit I've found. If you are allegic to EGGS try organic eggs , cage free and know what they are eating.I can't eat egglands best because they feed their chickens soy.
How much of the ghee would you have from 4 pounds of butter? Would it work to use only 1 pound of butter at a time?

Yes it would work. That's how I started with 1 lb. to see if it would work many years ago. I think it's about a 1/4 c. of dairy protein that you lose.
I hope to try this later in the week! Thanks so much Esther! My joints have been hurting and I think it's because I'm still eating margarine.
Esther's Chocolate Mayo Cake
Oh my! This is THE BEST low carb cake I've made so far! Thank you Esther! It's wonderful! I replaced the almond flour with sunflower flour and used coconut milk instead of almond milk.
GF Chocolate Mayo Pound Cake
3 cups almond flour ( if you use almond meal sift it)
1/2 c. coconut flour
1/2 c. oat flour
1/2 c. cocoa
1 1/4 tsp baking powder
1 tsp.baking soda
1/2 c. Erythritol ( I used Xylitol because that what I had)
1/4 tsp liquid sucralose or 1 c. grandular splenda
3 packets truvia
1 tsp vanilla
1 c. mayonaise
2/3 c. vanilla davinci syrup ( I use raspberry 'cause I wanted to.)
2/3 c. cream ( I used 1 c. almond milk I'm dairy free)
I used my by Vid-Saver"kitchenaid to mix this. You can use a food processor.
Mix this a couple minutes than scrape down and mix again for 2 more minutes.
This makes a lot.
I cooked this in a large bundt pan and 3 small bundt pans. (or use round cake pans) (Note from Georgene: I used a cheese cake pan).
350 for 45 minutes and the little ones took 30 minutes.
O Grammy that is such a good cake. You made it with sunflower flour . Awesome.
I don't use oat flour anymore and I use coconut milk now too. Love this cake.
What do you use in the recipe instead of the oat flour?
I add more of my main flour ( almond for me ) sunflower for you.There are only 2 flours I can use.

Healthy Bread Rolls (Gluten- and Grain-Free) by Healthy Indulgences
Makes 6 rolls
3/4 cup sifted coconut flour
1/4 cup plus 2 Tablespoons ground sunflower seeds
1/4 cup golden flax seed meal
1/8 teaspoon aluminum-free baking powder
1/2 teaspoon fine sea salt*
1/2 teaspoon xanthan gum
1/16 teaspoon pure stevia powder
1 1/8 teaspoon Active Dry yeast (half of a packet)
4 large eggs, room temperature (no cold eggs!)
5 Tablespoons melted unsalted butter OR 5 Tablespoons – 1 teaspoon of oil (I use half EVOO, half EVCO)
1 1/2 teaspoons honey (the sugar will be eaten by the yeast)
1/2 cup warm water**
*Add 1/8 teaspoon more salt for more of a biscuit flavor
**Add 1 teaspoon extra water if you are using oil instead of butter
Grind sunflower seeds and whole flax seeds (if you did not buy flaxseed meal) into a fine meal with a coffee grinder, Magic Bullet blender, or food processor. Line a cookie sheet with parchment paper or a silpat. Alternatively, grease the 6 wells of a muffin top pan. Preheat oven to 350 degrees Fahrenheit. Sift coconut flour into a bowl, gently spoon it into your measuring cups, and level with a knife. In a large mixing bowl, whisk together the coconut flour, sunflower seed meal, flaxseed meal, sea salt, xanthan gum, stevia, and baking powder.
Warm 1/2 cup warm water in the microwave for 8-10 seconds to heat it. Drop yeast into it. In a small bowl, whisk together eggs, melted butter or oil, and honey. Whisk yeast water into egg mixture. Use hand mixer to beat the egg mixture into the dry ingredients. Continue to beat the batter for one minute to smooth out lumps and give the dough a light and airy quality.
Spoon out the sticky dough onto the cookie sheet in 6 dollops. Shape the dough into rounds and smooth the tops with wet fingertips. Don’t press the dough flat – just round out the tops to give the rolls a more pleasing appearance. Dip your fingers into water as necessary before smoothing the tops of each roll. Bake rolls for 25-30 minutes, or until golden brown and firm to the touch. Remove rolls from the oven, and wait a minute or two before gently prying them out of the pan and setting them on a cooling rack lined with a paper towel. Let rolls cool for a half hour or so (I know, I know, it’s tough!). Slice one in half. Add a healthy dollop of butter, or leave it plain. Eat.
Store rolls in plastic ware containers lined with paper towels. Refrigerate after 24 hours. Reheat in the microwave for a few seconds, or toast, for the best taste and texture.
-5.2 grams net carbohydrates per roll (not counting 1 teaspoon of the honey, since the yeast consumes most or all of the sugar**)
-294 calories per roll**
On these things you can use the sweetner that you like . I always do. I have to change the flax to more sunflower flour or chia seed meal.

I LOVED the stuffing! I added just a bit of sage. It was great!
I also made the Ghee and it turned out so yummy! I saved the 'crusty' part to use in husband's recipes.
I want to make some coconut milk yogurt. I bet it's yummy! I made cashew yogurt before I found out I can't tolerate tree nuts. It was very good!
Esther, does the dairy in chocolate bother you?
Me, again! If/when you have time I wondered if you could list the main dinner meals you make? So many of the low carb recipes call for cheese or sour cream or yogurt.
2 cans of coconut milk for the yogurt and the same process. Make sure you are reading the labels of the coconut milk.Some of it is coconut extract and water and thickner. My sister found out when she sent somebody to the store.
Georgene Sorry what milk in chocolate???? I use coconut milk in everything.....I'm not sure what you mean.
I use powdered cocoa and coconut oil for my unsweetened chocolate recipes.
