If you had most of the breast meat of a Costco chicken...

left and wanted to put together something very low carb and quick and easy for dinner, what would you make?

I would recommend chicken salad - in fact I've got some canned chicken breast that I am going to use to make some chicken salad for my breakfast tomorrow.
