Flax bread... an oldie but GOODIE!

So, I was cleaning out under a cabinet and found my old recipe box. I was flipping through the handwritten index cards (who does that anymore???) and found my original flax bread recipe from 10 years ago when I first started LC. So I decided to make it again and oh boy was it delish! Forgot how delightful it really was without all the extra stuff. So here it is:

2 cups ground flax meal
5 eggs
1 tsp baking soda
1 tsp baking powder
8 tbsp. davinci syrup ( I used brown sugar and cinnamon)
5 tbsp. oil
I also added 1 tbsp. of cinnamon since I was going for a sweet bread)

Mix all ingredients, I used a cookie scooper to evenly dollop the batter into my whoopee pan. It was perfect for the 12 whoopee spots

I'm not sure whose original recipe this is, maybe LindaSue or DanaC? I'm sorry I can't give credit where credit is due!


Bake at 350 for 24-26 minutes

so then I got inspired to make a sandwich type bread.

I used the same recipe with the following exceptions:

No syrup- used 2 tbsp. plain yogurt
No oil - used 5 tbsp. salted butter
added 1 tbsp. caraway seeds
added sprinkling of onion salt

Baked same time. OH MY WORD!! I just made the perfect little sandwiches!! They easily slice in half and I topped with mayo, swiss cheese and deli ham. Now I've eaten two more with just good ole butter spread on it!

I need to make another batch of these caraway ones. I know they keep well in the fridge!!
