Peggy's oven fried fish!

This recipe is wonderful and I've made it quite a bit. I'm wondering if it can be frozen after it's cooked though. Has anyone tried that?

Glad you like it so much, Kelly. We do, too.

I wouldn't think you could freeze this, as I suspect the pork rind coating would get REAL soggy as it defrosted. It MIGHT dry out in the oven, but the fish might also overcook and get dry and rubbery with rebaking.
