Two Ingredient Pumpkin Muffins

This is not Low carb,but good to have on hand for non low carbers

Two Ingredient Pumpkin Streusel Muffins

Ingredients
1. 1 box Betty Crocker Cinnamon Streusel Muffin Mix
2. 1 can Pumpkin Puree
Instructions
1. Preheat oven to 450 degrees and grease or line a 12 cup muffin tin.
2. Combine the can of pumpkin and the packet of muffin mix in a medium bowl until batter is blended.
3. Fill each cup 3/4 full of muffin batter.
4. Sprinkle streusel topping on each muffin and press into the batter until the surface is flat.
5. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.

Dixie Diner has a cinnamon struesel swirl muffin mix; I wonder if that would work with the pumpkin. Worth a try, I guess.

I have learned over the years, if there is something in the house non LC, after 9:00 P.M.
I'm going to eat some, so everyone who comes to my house eats Low Carb with me.......... ; o ).......... Ann

Same here, Ann. I can't be trusted with non-low-carb treats like potato chips and corn chips around. THIS I KNOW TO BE TRUE.
