Creamy Chicken Pepperjack Soup

I live in Michigan and recently visited a great little deli on Mission Point in Traverse City called Mad Daug Deli. I had a WONDERFUL soup and was wondering if anyone had ideas to "finish" this recipe... It just seems too easy, but may be right on the money - thoughts?

2 cups cubed, cooked chicken breast
3 - 14.5 oz cans chicken broth
1/2 lb Pepperjack cheese
1/2 cup heavy whipping cream

They used very thick spiral noodles (I think they're called capellini, or something like that). The base was very thick.

It seemed like a really simple recipe, but awesome, none the less!

I would most likely add a 4 oz. can of diced Ortega green chiles to that, and some garlic powder.

I have one I make called Creamy Green Chile soup, and we often add chicken to it to make it a meal. It's somewhat similar to the one you have, with the additions I cited.

If you're interested in comparing the two, that recipe is in the Vitamix Heaven thread.

This will be a great way to use up some of the Costco rotisseried chicken breast I bought!

I have this recipe in my files.
Chicken and PepperJack Cheese Soup Connelly
1 can of chicken broth
1 can of diced tomatoes
1 garlic clove-minced
2 cups of heavy cream
8oz of shredded pepper jack cheese
1/2 tsp xanthan gum
salt and pepper
In a medium saucepan combine the broth, tomatoes, garlic and chicken. Bring this to a boil and then reduce the heat and simmer for about 10 min. Remove it from the heat. In a second sauce pan pour 1 1/2 cups of the heavy cream (leave 1/2 cup out) and simmer then add the cheese. Stir until melted and then add this mixture to the broth/tomatoes. Heat on a low simmer and add the Xanthan gum and 1/2 cup heavy cream. Simmer for 10 min.
