Chicken Chili with Chili Cheese Crisps
I made a yummy chicken chili today and some chili cheese crackers to go with it. We all loved it here so I thought I would share. The chili is really easy to make but has lots of flavor. You can use ground hamburger or whatever you like in your chili but I just felt like chicken. I added a can of kidney beans but they're not needed. You can omit them or use your favorite beans.
You can google Atkins Chili Cheese Crisps for the cracker recipe. The crackers don't look perfect because I was rushing but they tasted yummy anyways and go really well with the chili.
1 pound of Chicken breast cut into bite sized pieces
1/2 cup chopped green pepper
1/2 cup chopped onion
1-2 tsp minced garlic
2 tbsp chili powder
1 tsp cumin
29 oz can of diced tomatoes
15 oz can of tomato sauce
15 ounce can of kidney beans or omit.
Salt & pepper
Sauté the green pepper and onion until soft, add in the garlic and chicken and sauté until the chicken is opaque. Add in the chili powder, cumin, diced tomatoes and the tomato sauce. Bring to a boil, cover and turn it down and simmer for an 1 1/2-2 hrs. You can uncover and simmer for 20 minutes at the end to thicken it up.
