Make-ahead meals? Cooking for a whole week?

Someone recently suggested to me that I cook on the weekends and make everything for the week. She was thinking of pasta and rice dishes, which I don't eat. I usually cook meals with all fresh ingredients and it takes about an hour every evening. Does anyone have any ideas for make ahead meals?

The only thing I do ahead is when I make meatloaf. I'll make two and cook one that evening, then freeze the other one to cook in the future.

Linda Sue's site is my favorite, stuff that doesn't need a lot of specialty ingredients, my kids will eat and a lot of stuff to make ahead, easy to half the recipe and if they are freezer friendly, she tells us.

Search on this forum for OAMC, once a month cooking, freezer cooking - I know there are a bunch of threads on doing exactly what you're wanting to do!

What about grilling? I grill all year round and this by far is the most convenient way of making my meal planning easier. I grill up a bunch of different meats and pair them with a salad or other veggie. Grilling doesn't have to be the same ol same ol boring either. Yesterday I grilled Halibut, Jerk Ribs, BBQ Chicken, Bacon Wrapped Shrimp stuffed with crab meat, colby jack and jalapenos. No cooking again until my next day off.
