Recipe question

Hi everyone. I'm trying to modify one of my favorite recipes to make it Low carb. The recipe contains sour cream, cream of celery soup, spinach, ground beef and mozarella cheese. I'm thinking that everything is okay with the exception of cream of celery soup. A full can of that is 22 grams of carbs. Any suggestions as to what I could replace it with. The cream of celery soup tends to add some thickness to the casserole. Thanks for any help.

Maybe some heavy whipping cream and actual diced celery?

Well I may be totally off base here but why not sautee some celery, add some heavy cream and hit it with the stick blender. Homemade cream of celery soup? Or not? I don't know but that's what I would try if it were my recipe.

Another thing i like to do is look at the label and see what the ingredients are. You might be able to imitate it like that. Personally I don't like the canned condensed soups, so I wouldn't think it would be that hard to best them if you made something from scratch.

I could try blending the celery and heavy cream. Hubby isn't a fan of celery so that would be good to blend it. The recipe calls for a whole can of celery soup so I'm thinking of using approximately 1/2 cup to 3/4 cup of heavy cream.

I looked at the label and wow, I never realized how many different ingredients are in the soup. Many of them, I can't even pronounce. The ones I can pronounce are ones I try to avoid, flour, milk, salt. So, I'm going to give a go and make my own. It really can't be that difficult.

A lower-carb choice is the cream of chicken and mushroom soup, for some reason! You might consider that instead.

Or just add some cream cheese - that should give it the thickness you'd be missing with the can of soup gone.

I was going to suggest cream cheese with some sauteed celery & onion but Char beat me to it! You can thin it with a little cream if needed.

What Char said and add some lightly sautéed celery.. I think you will have taste that

Cream cheese is a good idea too with sautéed celery. I think I will try it that way.

It is a great meal Harriet. One of my faves! I was at work tonight but this casserole was the other night. I think I will make up a big dish of it and freeze it to bring to work with me. Thanks again everyone.
