Texas Hash Casserole

Texas Hash is a very old recipe that is usually made with rice.
The simple substitution of riced cauliflower makes it easy to low carb and keep the same flavors of the original recipe

L/C Texas Hash

Ingredients

1 lb Ground Beef (I used 96% lean for this)
2 oz Onions, Diced, diced
1 large Green Bell Pepper, diced
1 1/4 cups Ro-tel diced tomatoes with green chilis (1 can)
1/2 lb Cauliflower Florets (frozen, riced)
2 tsp Spices, Chili Powder
1/2 tsp California Garlic Powder
1/2 tsp ground cumin
1/4 tsp Black Pepper
1/2 cup shredded Pepper Jack cheese (about 2oz)
Salt and pepper to taste

Directions

Rice, grate or chop the cauliflower and set aside to drain.
Brown ground beef with onions and bell pepper until cooked through. Add rotel tomatoes and spices.
Simmer for a few minutes until most of the liquid is absorbed. Taste and add salt and pepper as desired.
Add the cauliflower and simmer 2-3 minutes until it starts to soften.
**Sprinkle the cheese on top and cover, remove from heat and allow the cheese to melt.

**You can spoon it into a casserole, then top with the cheese and bake for 15-20 minutes to melt the cheese and crisp the top.

I make this a lot but with Dreamsfield Macaroni. It's a favorite at our house.

PS What's the difference between California garlic powder and Texas garlic powder?

I don't know lol. It matched calories/carbs up to my bottle of no-name garlic powder so I picked that one on myplate when I put the recipe in

Country Captain is a tomatoey chicken dish with raisins and lots of onions in it.
I tried to sub jicama for that sweet taste, but it didn't work. Neither did blueberries (and it gave it an awful color!).

Thanks, things are going great. My son is back on his feet after being bed ridden for 3 years and he's doing great.

I went to the emergency room in January with pain so sever I was throwing up. I was thinking I had appendicitis but instead I was diagnosed with ovarian tumors on both ovaries that were very suspicious for cancer. But when I went into the hospital to have them removed the tumors were totally benign. My doctor told me I had no idea how fortunate I was...I was extremely grateful.

I have two new grand babies a girl born in March and a boy born in May. My hippie daughters didn't go to the hospital to have their babies they both used a midwife. They have been having problems in the hospitals with patients, including newborns, contracting antibiotic resistant strains of Bactria and there have been fatalities. The girls didn't want to risk going into the hospital. Thankfully both births were quick and easy... and both babies were big and healthy.

I feel very blessed.

I probably use 2/3 of a box of Dreamsfield, but I make a huge pot (double reciepe) because it reheats in the microwave so well. Great comfort food and quick lunches. Oh. and I cook the macaroni before I add it.

Thanks, it seemed as though God had totally abandoned us for about 4 years and everything that could go wrong did. Then all of a sudden it's like the cloud with the silver lining just burst and showed us with good fortune, it almost makes me nervous.

I've never in all my life lived through a time as harsh as these past 4 years. We made it through buy just putting one foot in front of the other and not giving up no matter what happened...I hope to never have to do it again.

Yes it is such a blessing!!!! This is our little boy getting dressed up to go the the game with dad and our little girl fishing with mom and uncle Robert.

I made this tonight in my electric skillet. It was good..and dh loved it. I'm buying some sour cream to put on it for tomorrow night's dh..The Rotel is a bit hot for this NH gal..
but dh thought it was perfect.
