Jen E - today was my day to bake

your recipes! I made up a couple batches of your gluten free bake mix, then proceeded to make 4 lovely English Muffins. The only thing I changed in the mix was to add 1 tsp. oat fiber.

I also made your pumpkin chocolate chip bars -- yummy! I agree with you that they don't need frosting. I did add some nutmeg to the batter and some chopped pecans with the chocolate chips. I planned to add a tsp. of vanilla but I forgot to do that, senior moment I guess!

For anyone looking for the recipes, they are in Vol. 2 of LCAF.

They look yummy TG! You've been posting some very tempting pics lately! I tend to just gaze at them and drool lol I guess I need to get baking. Just need to decide which ones first.

Unfortunately, Gina, when I bake I usually get carried away and make a bunch of recipes, then it takes forever to use up. I did freeze some of my latest goodies so I'll have treats on hand when I need them and I can continue baking!

I do the same thing, I seem to get into these baking moods and will bake up a storm and then take a break. Especially after a summer because I don't bake much during that time, as I'm sure most people don't.

I do try to keep it within reason but it does sometimes get out of hand!
