Pita bread stuffed French toast

I found this recipe idea on the netrition site in a review for jok n al apple sauce. I've made it twice now using different jams and I really like it. I just wish I could find a low carb gluten free pita bread!

Pita bread stuffed French toast

Turn this applesauce into an awesome low carb breakfast-
Mix 3T applesauce with 2 T softened cream cheese. Split open 2 Joseph's low carb pitas along the outer edge and stuff with apple mixture. Dip pitas in a mixture of 1 egg, 1 T Splenda and 1/4 t vanilla. Fry in butter until golden and crispy. Serve with sugar free syrup. Makes fantastic stuffed french toast.

I think Maria Emarich has a LC pita bread up on her site, Gina. I think its one of her psyllium husk bread recipes if I recall correctly. She sliced the pocket into her rounds (they weren't created by an air pocket in the bread). But I'm thinking you could take any number of the thin LC tortilla or flatbread round recipes, make larger rounds, and fill one side and fold the other side over the filling (like a breakfast taco), sealing the edge with "something" (maybe cold cream cheese?) , then dipping or brushing the entirety with egg and frying. Man, that's a lot of trouble for French toast. Lazy cook that I am, I'd probably just stop at filling the thing, folding it over and digging in! LOL

Thanks Peggy, I will have to check out that pita bread recipe. I probably wouldn't go to all that bother either.

Using a ready made pita is so much easier, just split it and fill with the cream cheese and jam, dip in the egg and fry. I use my pancake maker and it takes all of 3 minutes from start to finish.

Haven't tried it but found a gluten free pita bread recipe here.

Been trying to get up the courage to try it. I like Kevin's pita bread so well that I'm afraid I would be disappointed.

Thanks I have seen that recipe, I'm wondering if it would toast well?

I'm not crazy about the psyllium breadbso I won't try Maria's pita bread recipe.

I will have to do some experimenting some day!

I did use the regular sized ones, they are 6" around. You can cut them in half and stuff each one but I just cut a slit on one side close to the top and stuff it that way.

The edges get crispy and crunchy. Yum!

Awe thank you Jennifer! She has become quite the singer/songwriter. She's been very creative lately. I feel special that I get to hear her songs first! I will let her know what you said, it's always nice for her to hear some encouraging words, and I was just telling her earlier today how much she has improved.

How have you been doing? Seems like I haven't heard from you in forever. I'm enjoying the fall weather, my favorite time of the year here in Maine!

Has anyone tried this yet? It's my favorite breakfast right now. I haven't tried stuffing it with savory fillings yet, but I'm thinking ham and cheese, pizza for a calzone or tomato and cheese to go with tomato soup. Yum!

I did try it with the Joseph's mini pitas. It was delicious.

I am thinking of doing a grilled cheese the same way without the egg dip.

I'm glad you liked it. I wouldn't use the egg dip for the savory either.

I've been making pizzas using the pita bread too, but I didn't stuff it, I topped it then baked it.

Thanks for the ideas for pita bread fillings. Your recipes are always delicious.

As for Ms. Rosie, I heard the new song (I loved Insomnia too) and this one is
just as good. Love her sweet voice. I have no luck at signing in to leave a
comment. So please tell her how much I enjoy her music.

Watched Cordova's U-Tube on making the gluten free pita. I think that
I shall try it as I do not eat the wheat anymore. I used to buy the pitas that
you use but can't do wheat anymore. I buy the lavash in sheets to make
DH his crackers that he loves.

Wow..

How about making Montereys with this recipe? Just dip the pita in egg/tiny bit of milk,
the stuff with cheese/turkey meat and cook..Another wonderful filling would be tuna salad, dipped and cooked.

The last one I ever had was at Disneyland. The restaurant in the
Pirates Ride makes them. So rich so good. Chris my daughter and

Monte Cristo or Crisco?

Oh this is yummy!!

Here's how I did it.

2 pita's
2 thin slices of Swiss
2 thin slices of ham
2 thin slices of turkey
1 tsp of Dijon mustard
1 egg
1/3 cup of milk (I used half cream and half water)(use your favorite milk sub)

Place the egg and milk in a wide shallow plate and season with salt and pepper. Whisk until the egg is broken up and evenly incorporated; set aside.

Place one pita on a work surface and spread the mustard on top, then layer the cheese, ham and turkey. Place the other pita on top and cut it in half. Melt butter in a large frying pan. Dip one half of the pita sandwich into the egg mixture coating both sides and place in the frying pan. Repeat with second half. Fry until golden brown and the cheese is melted.

Transfer to a plate and dust with powdered xylitol and serve with currant jelly, strawberry jam or cranberry sauce.

I could only eat half a sandwich, it's very filling and delicious!

Gina I am confused. Why did you use two pitas instead of putting the meat and cheese inside? Am I reading that wrong?

I just figured it would be more sandwich like and it was easier than trying to stuff it all in. You can stuff it if you want, whatever works for you. I split it with my daughter so we each basically ate one whole pita.
