Sub Low Carb a Recipe
 
I made a pasta meal last night for my boyfriend and I had a bite to test and see if it was done and it was delish! Now it was Meat crumbles(were both pescatarians) Velveta cheese, salsa, then the pasta. What can i sub out for the pasta to make a great meal and add substance to the cheese salsa and meat?

Zucchini cut into ribbons or use a spiral cutter to make noodles. Spaghetti squash.
But really, velveeta is not low carb at all, so you might want to use real cheese ;)

Good tip about the zucchini, i love zucchini! And i had no idea about velveta, thanks!

If you like cabbage, cabbage is also a great pasta substitute :)

Here's one I like
 
From Ginny Larsen published in Low Carbing Among Friends
Noodles for Lasagna or Crepes
*See cook's note at bottom
2 TBS. heavy cream
1 oz. cream cheese, softened
1 TSP. coconut flour (Bob's Red Mill)
1/8 TSP. salt
3 large eggs (4 if using for lasagna noodles)

I'M GOING TO DOUBLE THE RECIPE FOR MORE NOODLES.

In medium bowl, mix heavy cream, soft cream cheese, coconut flour,
and salt. Beat until smooth. Add eggs one at a time beating until smooth.

For Lasagna Noodles: Preheat oven to 350. Spray 9x13" baking pan with
non-stick cooking spray. Pour mixture into pan, spreading evenly.
Bake 10 minutes. This will make one large lasagna noodle.
You may double the recipe using two pans.

Have a sprayed pan with the recipe for meat sauce, and your grated cheese,
laying it on the bottom.

Loosen the noodle around the edges with spatula, rolling it up and laying
it on top of meat sauce and cheese unrolling as you go. Repeat with second
noodle if using.

* you can also cut the big noodle into the size you desire.
