Orange Cranberry Low-Carb Micro-muffin
 
It's fall (well ok not here in Texas :mad: ) but that means comfort foods for fall:)

Orange Cranberry Low-Carb Micro-muffin

Ingredients

1 Egg, beaten
2 tbsp Almond Flour
1 tbsp Raw Coconut Flour
1/8 tsp Double Acting | Baking Powder
2 tbsp Sugar Free orange syrup**
2 tbsp Fresh Cranberries (this comes out to about 6 berries), cut in 1/2
1 tsp Orange Zest
1 pinch Lite Salt Mixture
1 tsp regular butter

Directions

Melt butter in a microwave safe mug.
Mix flours, baking powder and pinch of salt.
Beat the egg, syrup and orange zest with the melted butter, then stir in the flour mixture. Gently stir in the cranberries and microwave for 2 minutes until cooked through.

Drizzle a little melted butter and a sprinkle of sweetener on top of the cooked muffin if you like. (not included in the nutritional info).

**If you don't have s/f orange syrup, use sweetener of your choice and about 1/4tsp orange extract.

This sounds wonderful Dottie. I usally make 6 and bake them. But this is going to work better for when I want something quick..... Thanks

Oh my, a single serving Cran-Orange muffin. Definitely will try this Char. My favorite muffin of all time, and I hadn't gotten around to sizing my recipe down. THANKS!
